Here’s my attempt to hop on the mini pancake cereal trend but single-serving of course because who’s got the time to make a whole batch of tiny pancakes. I don’t.
I didn’t serve mine exactly “cereal style” but you’re most welcome to!
They are the cutest and the fluffiest, indistinguishable from a full batch recipe.
The way I served this, somebody on reddit said this resembled “poffertjes“, which is “Dutch mini pancakes”. So cute! I’m so making a more authentic version next weekend so stay tuned!

Single-serving Pancake Cereal
pancake cereal for one!
Servings: 1 serving
Calories: 198kcal
Ingredients
- 1/3 cup flour (40 g) gf all purpose if desired
- 2 tsp sugar (8 g)
- 1 tsp baking powder
- pinch of salt
- 1/3 cup (nut) milk (80 g)
- 1 tsp (optional) apple cider vinegar or lemon juice (5 g) this makes a vegan buttermilk substitute, you can skip it
- drop of vanilla extract
Instructions
- In a mug, stir together milk, vanilla. If making buttermilk, add vinegar/lemon juice and let it sit 5 minutes.
- In a small bowl whisk together flour, sugar, baking powder, salt.
- Gradually add the liquid while whisking the batter. Thin your batter to your desired thickness, you may not need all of the liquid.
- Drop 1 tbsp pancake batter at a time and cook on medium heat (nonstick pans are life), flipping once they start to bubble.
- Enjoy with milk or any toppings you like!
Notes
- If using self-rising flour omit the baking powder.
- If not using a non-stick pan, make sure to grease your pan generously!
- Optional hint: Add 1 tsp oil to your batter to make the pancakes even fluffier.

I just want to say everything I’ve tried from you so far has been so good! Your recipes are such a help because I love sweets, but can’t trust myself with full batches around the house. Haha.
