What is a “brownie cake” you ask? Well it’s my single-serving cookie cake made double chocolate 🙂
So instead of the mouthful of “double chocolate cookie cake” I just call it a brownie cake. I made have coined the term, but probably not, I dare not ask google.
It’s a totally delicious fudge-y chocolate-y cookie that has a more open and delicate cake-y texture. Lots of words made by sticking a -y at the end.
Forgive all my usual hand wavyness when trying to describe what a delicious treat I made and trust me on this. Don’t forget to add that small scoop of ice cream on top!
Somebody once called it the “smallest scoop of ice cream ever seen” which is probably true. It’s not called MAXI-batch baker y’all.

Single-serving Brownie Cake
Equipment
- 1/2 cup ramekin or similar
Ingredients
- 2 tsp oil (10 g)
- 2 tsp (nut) milk (10 g) I use unsweetened almond milk
- 1 1/2 tsp maple syrup (10 g)
- drop of vanilla extract
- 1 tbsp cocoa powder (6 g)
- 2 tbsp flour (15 g) gf all purpose if desired
- 1/4 tsp baking powder
- pinch of salt
- 1 tsp chocolate chips (5 g) add more if you like
Instructions
- Preheat oven to 350F and grease a small ramekin.
- In a bowl, mix together oil, milk, syrup, vanilla, cocoa until well blended and smooth. Add flour, baking powder, salt and whisk into something between cookie dough and brownie batter. It should be thick but spreadable, if not add 1/2 tsp additional milk at a time until it is.
- Transfer to your ramekin and sprinkle chocolate chips.
- Bake 20 min, top with ice cream if you like, and enjoy!
Notes
- The recipe as written is very dark chocolatey. It’s the perfect dessert with some ice cream on top. But if you want it to be dessert on its own, add some sweetener or granulated sugar. Alternatively you can sub the milk for more maple syrup. It’s a very forgiving recipe!
- You can also totally increase the chocolate chips and fold them into the batter instead of just sprinkling on top. I was trying to keep this recipe on the calorie conscious side. Feel free to add nuts, sprinkles, or anything else and get creative!
