One of you asked me how they can cook their mug cake if they don’t have a microwave š¤
So a “mug cake” is a poor woman’s muffin š
If you have an oven (or toaster oven? air fryer?) and the patience to wait 20 minutes, preheat that oven to 350F while mixing ingredients, pour into a greased oven-safe ramekin and bake!
And guess what, it gets even better š± Look at that DOME.
Single-serving Banana Cake with Easy Chocolate Ganache
Servings: 1 serving

Equipment
- 1/2 cup ramekin or muffin pan
Ingredients
Cake batter
- 1/2 large ripe banana, mashed (about 60 g)
- 2-3 tsp (nut) milk
- 2 tbsp almond flour (14 g)
- 1 tbsp flax seed meal (7 g) sub regular flour
- 1/2 tsp baking powder
- 1/4 tsp ground cinnamon
- pinch of salt
Easy chocolate ganache
- 1 tsp tahini (5 g) sub other nut/seed butter
- 1 tsp maple syrup (7 g)
- 1/2 tsp cocoa powder
- 1/2 tsp or more (nut) milk thin to your liking
Instructions
- Preheat oven to 350F.
- Prepare the chocolate ganache by mixing together tahini, maple syrup, cocoa powder and 1/2 tsp (or more) milk.
- Mix all other ingredients in a bowl, adding milk 1 tsp at a time until you reach a cake batter consistency. Transfer to greased ramekin or muffin pan cavity.
- Bake 20-25 min, top with the sauce while the cake is still hot. Enjoy!
Notes
- As mentioned, you can make this in the microwave but the rise will be much less epic. Air-fryer should work better, just reduce baking time!
