The internet is brilliant for generating these but my parents are even more brilliant because they’ve been eating a version of this dessert for literal decades 🤷♀️ Except we don’t really have nut/seed butters (other than tahini) in Turkey so they just stuff them with nuts!
Speaking of tahini, my second to tahini is definitely sunflower seed butter, and then my third is pumpkin seed butter which is why I used my local @88acres seed-focused products 🤤 I’m team seed, no allergies, just preference (though apparently seeds are also more environment-friendly than nuts, costing a LOT less water to produce, so everybody wins).

Mini-batch Stuffed Dates
Ingredients
- 4 medjool dates (about 80 g)
- 4 tsp nut/seed butter (20 g) I used @88acres vanilla spiced sunbutter
- 1 tsp chocolate chopped/chips (5 g)
- optional Sprinkle of coarse sea salt (which I didn’t have)
Instructions
- Cut open dates, stuff with 1 tsp sunbutter each.
- Sprinkle chocolate and salt if using.
- Freeze until fudgy and cold.
- Eat off the freezer.
