My fav flavor of Lenny & Larry protein cookies is the birthday cake.
In this recipe I recreated this awesome protein enriched treat at home, in a way that I can make in minutes, as usual without any leftovers.
I don’t always keep boxes of my fav treats at home, for obvious reasons. Not obvious? OK the reason is then I would try to eat them all.
For this very reason, I like to reverse engineer their recipes at home, which makes me feel like I have access to them whenever I like. I can also control what goes into my treats this way, I use my fav protein powder, I use whatever sweetener, and thickener, etc.
Another obvious benefit is that when you make them at home, they cost a fraction of the price from the supermarket.
This cookie was an absolute winner and my brain went “phew, challenge achieved”.
If a birthday cake treat is your fav, you LOOOVE cookies, and you are (like me) forever trying to increase your protein intake, consider this recipe a go-to.
They have just the right soft, melt in your mouth texture, you will not even know if protein is in there or not.

Mini-batch Sprinkle Protein Cookies
Equipment
- Cookie sheet or similar
Ingredients
Dry ingredients
- 1/4 cup flour (30 g) gf all purpose if desired, I used oat flour
- 1/4 cup vanilla protein powder (30 g) can be vegan, but has to be flavored, I used Orgain vanilla
- 1/2 tsp baking powder
- 1/4 tsp (optional) xanthan gum optional but helps cookies be sturdier
- pinch of salt
Wet ingredients
- 2 tsp any oil (10 g) I used avocado oil, any neutral oil will work
- 2 tsp sugar (8 g) I used coconut sugar
- 2 tbsp (nut) milk (30 g) I used unsweetened almond milk
Mix-in
- 1 tbsp rainbow sprinkles (12 g)
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a medium bowl whisk together all dry ingredients (you can just use a fork). Add oil, sugar, mix. Add enough milk gradually to form a cookie dough. If it gets too wet, add some more flour.
- Fold in the rainbow sprinkles.
- Make rounds of cookie dough between your palms, flatten gently and place on the baking sheet.
- Bake for 12-14 minutes until the cookies are slightly golden. Let them cool completely (they will firm up as they cool).
- Enjoy!
