You know oatmeal fudge bars? I mean something like this.
Well, now you can make a mini version of it, eat it and move on.
The only diff is mine is stuffed with a fudgy brownie layer instead of chocolate fudge layer because fudgy brownies amirite.
NOTE: If you prefer fudge layer just use 2 tbsp chocolate chips and 2 tbsp nut/seed butter melted in the microwave and blended together instead. I would also increase the sugar in the oatmeal layer to 1/4 cup for the sweetness factor.
But the brownie layer here is to-die and elevates the whole vibe, so I’m just saying.

Mini-batch Oatmeal Fudge Bars
Servings: 4 bars

Equipment
- Small loaf pan or muffin pan (reduce baking time)
Ingredients
Oatmeal layer
- 2 tbsp (plant) butter, softened (28 g)
- 2 tbsp sugar (24 g) brown/coconut works best
- 1/3 cup flour (40 g) gf all purpose if desired
- 1/4 cup oats (20 g) rolled or quick oats
- 1/4 tsp baking powder
- pinch of salt
Fudge brownie layer
- 2 tbsp (plant) butter (28 g)
- 2 tbsp sugar (24 g)
- 2 tbsp cocoa powder (12 g)
- 1 tbsp flour (7 g) gf all purpose if desired
- 1/4 tsp baking powder
- drop of vanilla extract
- pinch of salt
Instructions
- Preheat oven to 350F and line your baking pan / muffin pan with parchment or liners.
- In a bowl cream together butter and sugar until light and fluffy. I used a hand mixer but you can also use a fork.
- Stir in flour, oats, baking powder and salt until well mixed. You might want to add your flour gradually and stop as soon as the mixture is crumbly but still sticks together, just in case you have over-measured your flour. If it gets too dry add a drop of water and mix again. This is your oatmeal cookie dough layer. Put it in the fridge while making the brownie layer.
- In a bowl add butter and microwave to melt. Add all other brownie ingredients and whisk until well blended. Oops I forgot to take the instruction image.
- In your pan layer the bottom with 2/3 of your oatmeal cookie dough.
- Spread the brownie layer smoothly on top.
- Sprinkle with the rest of your oatmeal cookie dough and tuck it in gently.
- Bake 20-25 minutes until nice and golden on top. Muffin cups will take 15-20 minutes.
- Cool your bars completely before slicing and enjoy!
