Here’s my copy-cat recipe for Lenny & Larry’s The Complete Cookies! And it’s a mini-batch so you can only make 2 single-serving cookies if you want.

It takes 5 minutes to make the cookie dough, 10 ish minutes to bake and boom, 12g protein per cookie and you can enjoy them for snacks or dessert.



They taste amazing, and they hold really well especially when I figured out the trick to add xanthan gum in the mix. Only 1/4 tsp per mini-batch helps these bind beautifully so you can pack them on the go.

Otherwise they will be still delish but maybe not as portable. If your tummy is sensitive to gums you can totally omit that ingredient.


These cookies are way cheaper and better portion controlled. I’m looking at you 400+ calorie cookies from Lenny & Larry.

Don’t get me wrong, they’re amazing but 400+ cals is not a snack for a human my size and I find it a bit tricky that they label one cookie as 2 servings. Talk about confusing.

Mini-batch Chocolate Chip Protein Cookies
Equipment
- Cookie sheet or similar
Ingredients
Dry ingredients
- 1/4 cup flour (30 g) gf all purpose if desired, I used oat flour
- 1/4 cup vanilla protein powder (30 g) can be vegan, but has to be flavored, I used Orgain vanilla
- 1/2 tsp baking powder
- 1/4 tsp (optional) xanthan gum optional but helps cookies be sturdier
- pinch of salt
Wet ingredients
- 2 tsp any oil (10 g) I used avocado oil, any neutral oil will work
- 2 tsp sugar (8 g) I used coconut sugar
- 2 tbsp (nut) milk (30 g) I used unsweetened almond milk
Mix-in
- 1 tbsp chocolate chips (15 g)
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a medium bowl whisk together all dry ingredients (you can just use a fork). Add oil, sugar, mix. Add enough milk gradually to form a cookie dough. If it gets too wet, add some more flour.
- Mix in the chocolate chips.
- Make rounds of cookie dough between your palms, flatten gently and place on the baking sheet.
- Bake for 12-14 minutes until the cookies are slightly golden. Let them cool completely (they will firm up as they cool).
