Here I am with my ugly hand in my blog throwing it back to that time where I made my small batch brownie cookies but instead of 6 regular sized I made 2 giant ones!
I blame those people I noticed at the playground sharing a big tupper-ware full of massive double chocolate cookies 🍪 Btw, totally not social distancing, but what made me more upset was the absence of a cookie in my hand (disclaimer: it’s a joke, social distancing is very serious 😷 ).
I naturally came home and made these immediately 🤷♀️ They hit the spot. Let me know if you try them!
Mini-batch Brownie Cookies
Servings: 2 large cookies
Calories: 186kcal
Equipment
- Cookie sheet
Ingredients
- 1 tbsp coconut oil, melted (15 g)
- 1 tbsp maple syrup (21 g)
- drop of vanilla
- 1/4 cup flour (30 g) gf all purpose if desired
- 1 tbsp cocoa powder (6 g)
- 1/4 tsp baking powder
- pinch of salt
- 1 tbsp chocolate chips (15 g) more to sprinkle tops
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a mug/bowl, melt coconut oil (I use the microwave), stir in syrup, vanilla. Stir in cocoa powder and mix until smooth and glossy.
- In a mug/bowl whisk together flour, baking powder, salt.
- Gradually add dry to wet and stir, stopping as soon as a soft, non-sticky cookie dough forms (you might not need all the dry mix). It should be something between cookie dough and brownie batter (add a pinch more flour or a drop of water to adjust).
- Fold in chocolate chips.
- Scoop dough on the cookie sheet, shape however you like.
- Bake 9 min so they stay fudgy like brownies inside (if making 3 regular sized cookies, bake only 8 min).
- Let them cool and firm up a bit. Enjoy!
Notes
- Recipe will make 2 large cookies and 3 regular sized ones. Bake regular sized cookies only 8 minutes.
- I have a feeling you could microwave these cookies on a low setting but I have not tried.
- You can also try throwing the whole batter in a ramekin and microwaving it 30 sec – 1 minute. You’ll cook a nice skillet cookie thing to share with someone, even if that someone is only you.
