Low-sugar Sugar Cookies? An oxymoron? Maybe, but a delicious one at that.
Usually when I make a recipe I’m like “ok naxT”. But I’ve made these cookies twice already so that’s saying something 👌 So easy, so good!
I decided to use grain-free flour 🧐 I picked some “cassava flour” up at the store and wanted to try something new? 🤷♀️ Naturally gluten-free y’all.
BUT you can use any non-low-carb flour instead (anything but almond/coconut flour). Regular all purpose will work great for example.
Let me know if you give these a try before I go ahead and bake a third batch. They legit melt. in. your. mouth.
Grain-free Funfetti Sugar Cookies

Ingredients
- 4 tbsp (plant) butter, softened (56 g) sub regular butter
- 1/2 cup sugar (96 g)
- 1/4 tsp vanilla extract
- 1 cup cassava flour or all purpose flour (120 g) sub any flour other than almond or coconut
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2-3 tbsp (nut) milk I use unsweetened almond milk
- 2 tbsp rainbow sprinkles (30 g)
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a stand mixer or using a hand mixer cream together butter and sugar.
- Add vanilla, salt, flour, baking soda (mix baking soda into the flour a little first) and mix until a crumbly mixture is formed.
- Add enough milk 1 tbsp at a time to form a non-sticky soft cookie dough.
- Add sprinkles and mix a few more turns.
- Scoop on the parchment and shape how you like (they won’t spread) and bake 10 minutes.
- Let cookies cool and firm up before enjoying!
- Store in a slightly open container in room temperature.
Notes
- You can make 10 or so regular sized cookies from this recipe. Bake those a few min longer until their edges crisp up.
