Since weāre all missing traveling, I brought you something kinda exotic! Nanaimo bars are a British Columbia TREAT š± A place Iāve never been to but now that Iām hashtag blessed to have friends from all over the dang world (thank u IG) I get a ton of desserts-piration.
I made these, never having tasted the original, adapted to my usual ingredients, cut sugar down a bit, got rid of the baking component, you know the drill. THEY WERE SO GOOD. I just hope they come somewhat close to original š
No-bake Nanaimo Bars
Easy plant-based recipe for British Columbia's Nanaimo Bars, no-bake-whatsoever and simple ingredients.

Equipment
- Standard loaf pan
Ingredients
- 1/4 cup chocolate chopped/chips (60 g)
- 1/4 cup nut/seed butter (64 g)
- 4 graham cracker sheets (or similar biscuits) crumbled (62 g) you can use a food processor for this
- 1/4 cup desiccated coconut (30 g)
- 1/4 cup chopped walnuts/pecans (30 g)
- 1/2 cup milk or nut milk (120 g) I use unsweetened almond milk
- 1/4 package instant vanilla pudding mix (26 g)
- 1 tbsp coconut oil (15 g)
- 1 tbsp nut/seed butter (16 g)
- 2 tbsp chocolate chopped/chips (30 g)
Instructions
- Line a loaf pan with parchment and grease with spray oil.
- Melt chocolate and nut butter until smooth (I use the microwave).
- Add graham crumbs, coconut, walnuts and press into pan.
- Mix together milk and pudding mix 3-5 min until thickens (I use a hand mixer).
- Pour into pan, let it set in the fridge.
- Melt coconut oil, nut butter, chocolate ingredients in the microwave until smooth.
- Pour into pan, even out, freeze until everything sets, at least a few hours.
- Slice and enjoy!
