Decadent no-added-sugar salty peanut and date bars covered with chocolate, made with just those ingredients and no baking required. Amazing!

The recipe happened when I happened upon these snacks at Whole Foods.



When I see stuff like this my dopamine and sugar infused brain immediately goes “ding ding ding!” as I’m sure you can relate to.

I grabbed the bag, went around the whole store debating whether or not this was worth the purchase.



Eventually the adult brain won and I decided to leave it then and there, come home and make the same thing, homemade, with just a few ingredients, in under 5 min active kitchen time.

It was a tactile activity for me (even your kiddos can make these btw!), therapy, and saved the environment some packaging while saving us some $$$.

Homemade is love. The bars were everything I could have asked for!

Mini-batch Chocolate Peanut Date Bars
Ingredients
- 2 large soft medjool dates, pitted and chopped (40 g) about 1/4 cup
- 1 tbsp nut/seed butter (16 g) I used peanut butter
- 3 tbsp peanuts (21 g) sub other nuts/seeds
Chocolate coating
- 1/4 cup chocolate chips (45 g)
- 1 tsp coconut oil (5 g)
Instructions
- In a bowl mash your chopped dates with a fork. If they're not soft enough to mash, you might want to soak them for 10 minutes in warm water.
- Add your nut butter, pinch of salt and a drop of vanilla and mash again to form a smooth dough.
- If too dry add a drop of water and mash again. Should be smooth and not too sticky like cookie dough. If too wet, you can add a pinch of oat/almond/coconut flour.
- Fold in your peanuts and knead a few times more. Make small bites and shape however you like. I shaped mine like mini snickers bars. Freeze to set, at least 1 hour.
- Microwave together chocolate and coconut oil, 30 sec at a time and stir until all chocolate is melted.
- Using 1-2 forks dip each frozen piece in chocolate and set on a piece of parchment. Re-freeze or refrigerate to set the chocolate.
