Fiber and protein-rich brownies, made out of black beans. Health is all about adding not subtracting nutrients!
Not sure if anyone noticed but I’ve been trying to be more authentic on social media. Making Friends not Followers, starting discussions that interest me, fighting for things I care about.
I’ve been way happier. I’m not here for money or clout. Beyond a certain level of comfort both of those hurt more than they help, and I’m lucky enough to have reached that level.
I also no longer make food for instagram. It’s the other way around. Instagram is the platform where I share the food I made already. Again, my relationship with food is way healthier and happier.
I made these a couple of weeks ago. Gave some away to friends and neighbors. They were a hit 🤤 And I think they’re a great example of nutritious food. Yes they taste nothing like healthy brownies. But they do incorporate the fiber and protein rich beans. To me nutrition is about adding foods, instead of subtracting.
I’m making them as a birthday treat for Austen this weekend 🥳 Maybe some of you will make them as well.
Black Bean Brownies
Equipment
- food processor or blender
Ingredients
- 1 15 oz can black beans, drained and rinsed
- 3 tbsp (plant) butter melted (42 g) sub coconut oil
- 1 tsp vanilla extract
- 2 large eggs
- 2/3 cup sugar (120 g) decrease if this is too much or sub granulated stevia etc.
- 1/3 cup cocoa powder (30 g)
- 1 tsp (optional) instant coffee
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (90 g)
Instructions
- Preheat oven to 350F and line an 8×8 dish with parchment.
- Blend beans until smooth. Add butter and vanilla and blend again.
- Add the rest of the ingredients pulse to combine.
- Add chocolate pulse until broken down.
- Pour into dish, bake 25 minutes.
- Cool in the fridge and slice (I used @cutluxe knives that were gifted to me and they are amaze).
