Easy, low sugar, whole-grain (or gluten-free) Banana Oatmeal Chocolate Chip Pancakes effortlessly made in a sheet pan!
Wanna make pancakes for the whole family in 15 minutes? I gotchu.
The thing is though, said family will devour those pancakes within minutes of them coming out of the oven and you will have only a few slices with an empty sheet pan in the background to take photos of… life of a food photographer with a hungry family I guess?
All you need for this recipe is a few simple ingredients, 1 bowl, a spatula, a sheet pan. And you’ll deliver pancakes to the fam in about 15 minutes.
Start by mashing your ripe banana, whisk in add egg, unsweetened almond milk, 1 tbsp your favorite healthy oil (we love avocado oil and buy it at Costco). Blend into the same bowl flour, oats, baking soda, baking powder, cinnamon and pinch of salt. Fold in chocolate chips.
Transfer to a sheet pan, bake in a preheated oven for 10 minutes. Cool for a few more minutes then slice! It is that easy!
They are super healthy too! Only made with healthy grains (or sub gluten-free flour) oats (gf if desired) sweetened with bananas and chocolate only. They’re the perfect weekend treat with a side of milk, yogurt, or eggs…
Just remember to drizzle that maple syrup before excitedly snapping the photos. Wait, you don’t take hundreds of photos of your breakfast before eating it? How do you build the ravenous appetite? 🙂

Easy Banana Oatmeal Chocolate Chip Sheet Pancakes

Ingredients
- 1 egg
- 1 ripe banana (about 120 g)
- 1/2 cup any milk (we use unsweetened almond milk) (120 g)
- 1 tbsp any oil (we use avocado oil) (15 g)
- 1/2 cup white whole wheat, all purpose or gf all purpose flour (60 g)
- 1/2 cup quick oats (40 g)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup mini semisweet chocolate chips (60 g)
Instructions
- Preheat oven to 350F and thorougly grease a 10×15 sheet pan (jelly roll pan). I use spray oil.
- Thoroughly mash your banana and beat in egg. Whisk in milk, oil.
- Blend in flour, oats, baking powder, baking soda, cinnamon, salt. Fold in half the chocolate chips.
- Transfer mixture to prepared pan, making sure it reaches all sides.
- Sprinkle the rest of the chocolate.
- Bake for 10 minutes until the center is set and edges have lightly browned.
- Cool for a few minutes, slice and lift with a spatula.
