Mini-batch Keto Cookies

Ingredients

  • 1/4 cup almond flour (28 g)
  • 1 tbsp coconut flour (7 g)
  • 1 tbsp granulated sweetener (12 g) I used Lakanto monkfruit sweetener
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 2 tbsp (plant) butter softened (28 g)
  • 2 tbsp sugar-free chocolate chips (30 g) vegan if desired

Instructions

  • Preheat oven to 350F and line a cookie sheet with parchment.
  • In a small bowl whisk together all ingredients but butter and chocolate chips.
  • Using a fork cut the softened butter into your dry ingredients to form a cookie dough. If too crumbly add 1 tsp water at a time until it sticks together.
  • Fold in chocolate chips. Make balls of dough between your palms and flatten on the parchment.
  • Bake for 10-12 minutes until gently browned around the edges. Let your cookies completely cool and firm up before handling.
  • Enjoy!!

Notes

  • Instead of baking, you can also microwave these cookies. Just place a cookie on a piece of parchment paper in the microwave and cook at 70% power for about 60-90 seconds. Cookies cooked in 1 minute, nothing wrong with that!
