1tbspgranulated sweetener(12 g) I used Lakanto monkfruit sweetener
1/4tspvanilla extract
pinch ofsalt
2tbsp(plant) butter softened(28 g)
2tbspsugar-free chocolate chips(30 g) vegan if desired
Instructions
Preheat oven to 350F and line a cookie sheet with parchment.
In a small bowl whisk together all ingredients but butter and chocolate chips.
Using a fork cut the softened butter into your dry ingredients to form a cookie dough. If too crumbly add 1 tsp water at a time until it sticks together.
Fold in chocolate chips. Make balls of dough between your palms and flatten on the parchment.
Bake for 10-12 minutes until gently browned around the edges. Let your cookies completely cool and firm up before handling.

Notes
Instead of baking, you can also microwave these cookies. Just place a cookie on a piece of parchment paper in the microwave and cook at 70% power for about 60-90 seconds. Cookies cooked in 1 minute, nothing wrong with that!
