1frozen acai pack (or ripe banana)(about 100 g) sub other frozen fruit
1/2cup oats(40 g)
1tbspnut/seed butter(16 g)
1servingprotein powder(38 g) I use Orgain vanilla protein
1/2cupnut milk(120 g) add gradually, use enough to blend, amount will vary based on your protein
Chia pudding layer
1/4cupchia seeds(48 g)
1/2cupnut milk(120 g)
1tbspmaple syrup(21 g)
Instructions
Add all chia pudding layer ingredients to a jar, stir and refrigerate 30 min - 1 hour to thicken. You might need to stir to remove any clumps.
Add all blended oats layer ingredients except 1/4 cup of the nut milk in a blender and blend. Use the remaining nut milk only if necessary since we want to keep it thick. Taste and add sweetener if necessary (I didn't).
Layer in two jars, first the blended oats and then the chia pudding. Top with any toppings (see notes below for edible cookie dough recipe) and enjoy!
Notes
To make the edible cookie dough bites:
1 tbsp nut/seed butter
1 tbsp maple syrup
1/4 cup oat flour (about 30 g) - you might not need all of it
1-2 tsp mini chocolate chips
Mix nut butter, maple syrup, a drop of vanilla extract and a pinch of salt in a bowl, add flour gradually until you get a non-sticky cookie dough, you may not need all of the flour. Fold in chocolate chips. Press between two pieces of parchment and freeze solid (30+ min). Chop into cookie dough bites and sprinkle on top.
