Single-serving London Fog Scone

Equipment

  • Cookie sheet or similar

Ingredients

  • 1 tsp oil (5 g) you can sub melted butter
  • 2 tsp (nut) milk (10 g)
  • 1/2 tbsp maple syrup (10 g)
  • 3 tbsp flour (21 g) gf all purpose if desired
  • 2 tbsp oats (10 g) or more flour
  • 1/4 tsp baking powder
  • 1/2 bag of earl gray tea just tear open the bag and pour it in
  • 1 tsp white chocolate chips (5 g) or chopped chocolate

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment.
  • In a mug add oil, milk, maple, drop of vanilla and blend.
  • In a small bowl add flour, oats, baking powder pinch of salt, tea granules.
  • Add wet into dry and combine. Fold in chocolate.
  • Drop the batter on the parchment and shape into a triangle (or leave as is).
  • Bake 20 minutes until slightly golden around the edges. Cool and enjoy! I also drizzled some melted white chocolate after cooling.

Notes

  • I drizzled some melted white chocolate after cooling which turned this snack into an awesome dessert. Alternatively you can make a single-serving icing out of 1 tbsp powder sugar and 1 tsp maple syrup mixed together. It will set beautifully esp when refrigerated.
