Ingredients

  • 1 egg beaten, or 1 flax egg
  • 1/4 cup (nut) milk (60 g) I use unsweetened almond milk
  • 1 tbsp maple syrup (21 g)
  • pinch of salt
  • drop of vanilla
  • 2 cups thick chopped bread (about 120 g) gf if desired

Instructions

  • Mix egg/flax, milk, maple syrup, salt, vanilla (add a dash of cinnamon if you like) in a large bowl.
  • Cut up your bread, throw in the bowl, toss.
  • Fry a few minutes without flipping until browned and toasty on the that side. Flip and brown the other sides. I use a non-stick pan and spray with oil.
  • Serve immediately with fruit, syrup, nut/seed butter!

Notes

  • To make a flax egg, stir together 1 tbsp (7 g) flax seed meal and 3 tbsp water and let it sit and thicken for 5 minutes.
