Easy French Toast Bites for Two
The easiest way to fill your tummy with french toast.

- 1 egg beaten, or 1 flax egg
- 1/4 cup (nut) milk (60 g) I use unsweetened almond milk
- 1 tbsp maple syrup (21 g)
- pinch of salt
- drop of vanilla
- 2 cups thick chopped bread (about 120 g) gf if desired
Mix egg/flax, milk, maple syrup, salt, vanilla (add a dash of cinnamon if you like) in a large bowl.
Cut up your bread, throw in the bowl, toss.
Fry a few minutes without flipping until browned and toasty on the that side. Flip and brown the other sides. I use a non-stick pan and spray with oil.
Serve immediately with fruit, syrup, nut/seed butter!
- To make a flax egg, stir together 1 tbsp (7 g) flax seed meal and 3 tbsp water and let it sit and thicken for 5 minutes.
