Single-serving Peach Cobbler

Equipment

  • Oven-safe ramekin

Ingredients

  • 1/2 cup peach slices, peeled (about 70 g) frozen or canned is ok, i used frozen
  • 1 tsp oil (5 g)
  • 1 tsp maple syrup (7 g)
  • 1 tbsp (nut) milk (15 g)
  • 1/4 tsp vanilla extract
  • 1/4 cup flour (30 g), gf all purpose if desired, I used oat flour
  • 1/4 tsp baking powder
  • pinch of salt

Instructions

  • Preheat oven to 350F and grease a 1/2 cup ramekin.
  • Place chopped peaches in your ramekin and place in the preheating oven so they start to get soft.
  • Mix oil, milk, syrup, vanilla in a mug/bowl.
  • Whisk together flour, baking powder, salt in another mug/bowl.
  • Combine the two, folding only a few times, without overmixing to form a biscuit dough.
  • Get the ramekin out of the oven, top with the biscuit dough and bake 20 min.
  • Top with some ice cream, enjoy!

Notes

  • The recipe is sweet enough for breakfast/snack. if you want this to be a rich dessert-like experience, toss peaches in 2-3 tsp sugar or sweetener. That should do it!
