Tahini Coconut Protein Energy Balls

Ingredients

  • 1/4 cup soft medjool dates, pitted (40 g) about 2 large
  • 1/4 cup tahini (56 g) sub other creamy nut/seed butter
  • 3/4 cup desiccated coconut (75 g) you can sub quick oats
  • 2 tbsp cocoa powder (12 g)
  • 1 1/2 tbsp maple syrup (32 g)
  • 1/4 cup protein powder (30 g) plant-based if desired, you can also sub oat flour
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon

Instructions

  • Blend everything in a food processor until combined. It should be like cookie dough. If too wet, add more protein powder, too dry, add 1 tsp water at a time until combined.
  • Roll up walnut sized balls between your palms. (Optional) roll in cocoa powder or more coconut.
  • Keep refrigerated and enjoy!
