Remember my MIL’s “useful” cookies? That I “veganified”…
Well I made another batch. Just as they were going into the oven, I asked myself: Why exactly am I baking these? No eggs? 🤔 And the Nobake Useful Cookies were born!
We like them as much as the baked version. They’re denser, chewier, go so well with some milk as quick breakfast or the perfect little workout snack. Instant energy 💥
Small-batch No-bake Oatmeal Cookies
Servings: 8 cookies

Ingredients
- 2 tbsp nut/seed butter (32 g)
- 2 tbsp sugar (24 g) sub granulated sweetener
- 2-3 tbsp applesauce (30-45 g) sub mashed banana
- 1/4 tsp vanilla extract
- 1/4 cup oat flour (30 g) process oats into a fine flour
- 3/4 cup quick oats (60 g) process rolled oats a few times
- 1/4 tsp cinnamon
- pinch of salt
Mix-ins
- 1/4 cup dried fruit (40 g) chopped if necessary
- 2 tbsp nuts/seeds (15 g) chopped if necessary
- (optional) melted chocolate to drizzle
Instructions
- Mix all but mix-ins, adding enough applesauce gradually to combine into a soft stir-able cookie dough. Fold in mix-ins.
- If the dough gets too sticky, refrigerate 10 minutes.
- Scoop heaping tbsp at a time, make balls between your palms, flatten.
- If using chocolate, melt and drizzle on cookies, refrigerate to set.

Notes
- Recipe will make 8 snack-sized and 4-6 breakfast sized cookies. We have the cookies with some milk or yogurt for added protein!
