Have you heard of Alison Roman’s Salted Butter and Chocolate Chunk Shortbread Cookies?
Well I have and I’ve been wanting to make it for about 1/2 a decade.
Sadly, it never happened. I read that recipe and I just can’t. I end up grabbing a handful of chocolatey granola and call it a snack in my sad shortbread-less moment of existence.
Then one day I realized I have a mini-batch dessert blog… and was inspired by this easy shortbread recipe.
Here’s the recipe I came up with. Probably not as life-changingly-delicious as the original but believe you me it hit the spot.
I left the chocolate optional but you know what to do with the optional-ness of chocolate.
It never is.
Btw, since y’all don’t really know me, I’m trying this thing where I sprinkle some dorky photos from my recent excursions.

Small-batch Classic Shortbread
Equipment
- Hand/stand mixer or whisk
Ingredients
- 1/4 cup (plant) butter, softened (56 g)
- 2 tbsp powdered sugar (15 g) you can probably sub regular sugar, the texture will be slightly different
- 1/2 cup all purpose flour (60 g) sub gf all purpose
- pinch of salt
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a medium bowl cream together sugar and butter until light and fluffy. I used a hand mixer but you can use a stand mixer or even a whisk (consider it a workout).
- Add pinch of salt and 1/4 cup flour at a time and beat to combine until a soft non-sticky dough forms. You might need a little extra flour to make it non-sticky.
- (Optional) You can add in 1/4 cup chocolate chips/chunks or nuts at this point.
- Either roll the dough thin and cut cookie shapes or shape into cookies by hand (my method). Sprinkle flaky sea salt if you desire.
- Bake cookies about 15 minutes depending on your desired level of done-ness.
- Let cookies cool and firm up slightly and enjoy!

Iāve been eyeing Alisonās recipe too! I love your suggestions and may just have to make this tomorrow! I might roll the edges in a bit of the coarse sugar (the name escapes me) and add just the smallest amount of salt flakes to the top of the cookies to mimic the original a bit more.
