My precious spawn has finally managed to roll off our bed and hit the floor for the first time last night š¤¦āāļø Try getting up to pee and hearing a thud and a wail while semi-conscious on the toilet.
Sheās fine. I actually conked right back out while daddy panicked and couldnāt fall asleep apparently. And thatās the difference between mommy and daddy in this house.
Mama has seen some sh*t š¤Ø She’s been through pregnancy, labor, an emergency c-section and had to survive a deadly postpartum hemorrhage. The kid can take a fall. š
I do feel bad tho because I sleep on an anti-reflux mattress (wait till you get to your late 30s, itās fun) so that bed is high. Well, will it teach her not to sleep with mommy and daddy at almost 3yo? NOPE.
Say hello to my proudest and most favorite food invention. The week that I created this I had it at least 5 times. Every time with a different fruit.
Honestly that biscuit layer on top, is vegan and single-serving but it’s just as good as the full batch full butter version. Try it and fight me if you like!
Single-serving Peach Cobbler
Equipment
- Oven-safe ramekin
Ingredients
- 1/2 cup peach slices, peeled (about 70 g) frozen or canned is ok, I used frozen – you can sub other fruit and berries too
- 1 tsp oil (5 g)
- 1 tsp maple syrup (7 g)
- 1 tbsp (nut) milk (15 g)
- 1/4 tsp vanilla extract
- 1/4 cup flour (30 g), gf all purpose if desired, I used oat flour
- 1/4 tsp baking powder
- pinch of salt
Instructions
- Preheat oven to 350F and grease a 1/2 cup ramekin.
- Place chopped peaches in your ramekin and place in the preheating oven so they start to get soft.
- Mix oil, milk, syrup, vanilla in a mug/bowl.
- Whisk together flour, baking powder, salt in another mug/bowl.
- Combine the two, folding only a few times, without overmixing to form a biscuit dough. It should be slightly crumbly but still stick together. If too dry and crumbly add a drop of water or nut milk. If too wet add a pinch more flour.
- Get the ramekin out of the oven, top with the biscuit dough (optional: dab with water and sprinkle some turbinado sugar on top) and bake 20 min or until golden and cooked through.
- Top with some ice cream, enjoy!
Notes
- The recipe is sweet enough for breakfast/snack. if you want this to be a rich dessert-like experience, toss peaches in 2-3 tsp sugar or sweetener. That should do it!
- You can air fry this, use the same temperature but give it a few less minutes or check to make sure it’s not getting too crumbly. Let me know how it goes!
