Why did I make keto cookies out of nowhere? Knowing full well my love of all things carb?
Not to get all TMI on you dear reader, but as I’m nearing my 40s I’ve been having some brand new lady problems (fun times), one of which is I’ll apparently go full hypoglycemic after a carb-y breakfast during the week before my lady period.
Yay!! 😒
So now I have to invent brand new ways to sneak cookies into my daily breakfast all month round, and this is how these cookies came to be.
They’re honestly just like shortbread cookies. Buttery, melt in your mouth, with a bit of crunch around the edges. So good, and still gluten-free and can be made vegan, as I typically deliver.
They’re also super easy to make, all you need is a bowl and a fork. And if you want more than 3 cookies, go ahead and 4x the recipe below.

Mini-batch Keto Cookies
Ingredients
- 1/4 cup almond flour (28 g)
- 1 tbsp coconut flour (7 g)
- 1 tbsp granulated sweetener (12 g) I used Lakanto monkfruit sweetener
- 1/4 tsp vanilla extract
- pinch of salt
- 2 tbsp (plant) butter softened (28 g)
- 2 tbsp sugar-free chocolate chips (30 g) vegan if desired
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a small bowl whisk together all ingredients but butter and chocolate chips.
- Using a fork cut the softened butter into your dry ingredients to form a cookie dough. If too crumbly add 1 tsp water at a time until it sticks together.
- Fold in chocolate chips. Make balls of dough between your palms and flatten on the parchment.
- Bake for 10-12 minutes until gently browned around the edges. Let your cookies completely cool and firm up before handling.
- Enjoy!!
Notes
- Instead of baking, you can also microwave these cookies. Just place a cookie on a piece of parchment paper in the microwave and cook at 70% power for about 60-90 seconds. Cookies cooked in 1 minute, nothing wrong with that!
