Soft vegan peanut butter cookie hugging a piece of chocolate. Need I say more?
Last year I made y’all something special for Galentine’s Day. It was more of a cake-year for me though. I remember a lot of banana bread and muffins for dayz. So for galentine’s day I made this Chocolate Cherry Cake, and it was dang good and a healthy satisfying snack. Full of healthy fiber, both from fruit and grains, healthy fats from eggs and coconut. Only a small amount of added sugar from unrefined coconut sugar. It won many a healthy galentine’s heart, including mine.
So far this year has been more of a “cookies and brownies” kind of year. We’re talking FUDGE and CHEW. But I’ve been partial to crunch over anything lately (gimme all ur granola will ya) so I made my “something special” February thing a COOKIE.
And what a cookie it was. Crispy on the outside, chewy on the inside, chocolate that is silky smooth melts and blends with the peanut butter… I did good.
These Healthy Peanut Butter Blossoms are EASY as always. All you need is one-bowl, a spatula and an oven for these to happen right where you are. You also need the following few ingredients:
- Peanut butter
- Maple syrup (or honey for non-vegans)
- Any type of milk
- Wheat flour (gf all purpose can be used as well)
- Chocolate (doesn’t even have to be heart shaped, and can be vegan if you prefer)

Easy Peanut Butter Blossom Cookies
Ingredients
- 1/2 cup creamy peanut butter (128 g)
- 1/4 cup maple syrup (84 g)
- 3/4 cup flour (90 g) gf all purpose if desired
- 2 tbsp (nut) milk (30 g)
- 1/4 tsp baking soda
- 1/4 tsp salt
- Optional sugar to sprinkle rims of cookies
- 20 pieces chocolate vegan if desired
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- Stir together peanut butter and maple syrup.
- Add flour, make a well in the center, add baking soda, salt, roughly mix those into the flour (I use the tip of my spatula).
- Combine until a crumbly mixture is formed.
- Add enough milk to form a soft cookie dough (add 1 tbsp at a time and stop as soon as it comes together).
- Make 20 balls (I used my small cookie scoop) and flatten gently.
- Bake 8 minutes, remove from the oven, press a piece of chocolate onto each cookie.
- Let cookies cool and firm up before enjoying.
